Anguilla Culinary Team Practice Dinner 1

The Anguilla Culinary Team 2004 is practicing for the upcoming Caribbean Culinary Competition. In an effort to become an efficient team and to raise money for the trip, the team got together at CuisinArt Resort for a practice dinner.

A three course menu was prepared by the competition chefs for eager diners on Sunday April 25 in the Santorini Restaurant. The hotel donated staff and assistance in preparation and service.
The Menu
To start a sweet pea soup in a demi-tasse cup.
Appetizer
Sweet potato pancake, marinated Spiny lobster with pumpkin-cardamon sauce
Entree'
Rotisserie pork loin seasoned with herbs and lemongrass, fungi wrapped in cabbage and plantain salsa
Palate cleanser
champagne and grapefruit sorbet
Dessert
Ginger creme brulee with orange sauce and candied lemon.

The entire event was delightful with exceptional service and interesting selections. The team is planning more practice dinners as they advance towards the competition. The AHTA will keep member informed as to the venue of the next dinner.
